A document's Library can contain a number of different objects, from folders and video to movie clips and buttons. Normally the items in the Library are ordered alphabetically from A to Z. If you have a ton of folders in your Library as well, you'll notice that they're scattered around in the item list in alphabetical order, too. Because most of us are used to folders being anchored to the top of a list (like in Windows/Mac operating systems), why don't we do the same thing in our Library?
By putting an underscore "_" in front of the folder name, you can anchor that folder to the top of the Library. Doing this to all your folders will put them all at the top and alphabetize your folders separately from the rest of your assets. Whew, that looks a lot better.
