Musicians argue endlessly over this. There's no doubt that quantization helps tremendously to tighten up loosely played performances . On the other hand, it can render a beautifully expressive performance completely lifeless. So when do we resort to quantization? Well, let's suppose you are composing techno music as background music for a science documentary video. In this case quantization is probably a must. Computer music by its very nature lends itself to this kind of treatment. On the other hand, if you were working on music of a romantic nature, for a chocolate box advertisement, the music would need to 'breathe' in a rubato fashion. In this case quantization would be used sparingly, if at all.
Those are two extremes and there are many styles of music and combinations of instruments that fall in between. Choices have to be made.
