The best way to get started building taxonomies is to start the process and learn as you go. Experiment with the trade-offs, build a prototype, put it in use with some users to see how it functions, and then throw it away. The second and third ones that you build will be better-optimized and easier for all to use.
The initial taxonomy continues to evolve for a variety of reasons. The folder creation rate is probably slower than in traditional file systems, but does not stop. Business needs may require more document profiles. Properties add dictionary values. Usage expands and molds categories. Be prepared to constantly modify and update the work of setting up the initial workspace.
